Use these tips to make your muffins the best that they can be:

  • Use fine coconut flour for these muffins. Coconut flour tends to soak up a lot of liquid and can get really dry. Therefore, let the batter rest for 5 minutes before use. Check the batter and if needed add 1 more egg.
  • If you cannot find the keto or sugar-free chocolate chips, use sugar-free chocolate instead. Just chop that up into small pieces and use.
  • You can also use coconut milk or heavy cream for the muffins. You need to use something dense and fatty to get batter right and so full-fat products are best. Therefore, if using coconut milk, try to use full-fat coconut milk which is coconut milk with 80% of coconut fat, or the white stuff in the can (most brands of coconut milk have 70% or less). You can also add 2tbsp cream cheese and use plain coconut milk and it will give similar results.

In a mixing bowl, combine coconut flour, low carb sweetener, and baking powder. Then fold in the egg and full-fat coconut milk. 

 

Stir the coconut muffin batter well until everything is properly combined. This should take a few minutes.

 

Next, spoon the mixed batter into the 6-hole muffin tin with paper liners.

 

Then sprinkle the top with keto-friendly chocolate chips.
