These delicious keto spinach stuffed chicken breasts feature creamy spinach inside soft and juicy chicken which is all you need for an amazing lunch.

This protein packed dish will satisfy anyone and kids love it too. The texture is more than amazing – delicious, juicy, and tender, while the flavors are so good.

Tips to make a great stuffed chicken recipe

  • Choose the chicken breasts that are big and thick, but not too big, or they will not bake properly. To check the doneness, insert a thermometer – when the temperature reads 165F the chicken is done. 
  • Do not cut the chicken breast completely. The key is to create a pocket, so leave at least ¼-inch of the uncut chicken meat. 
  • For a crisper and more golden chicken, sear the chicken breast in the skillet first, before baking.

Ingredients to make stuffed keto chicken breasts

  • 4 chicken breasts, skinless and boneless
  • Salt and pepper, to taste
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ¼ tsp onion powder
  • 4oz. cream cheese
  • ¼ cup grated parmesan
  • 2 tbsp mayonnaise
  • 1 ½ cup chopped spinach
  • Olive oil, as needed

How to make keto spinach stuffed chicken breasts

To start, first gather all your ingredients in one place, then preheat oven to 375F.

Next season the chicken breast with salt and pepper.  Also in a small bowl, combine paprika, garlic and onion. Sprinkle half the mixture over the chicken.

Cut the chicken with a knife so you make a pocket in each fillet.

In a bowl, combine cream cheese, the rest of the spice mix, parmesan, and mayonnaise. Add in the chopped spinach and stir to combine.

Stuff each chicken breast with the spinach mixture.

 

Next, drizzle the baking dish with oil and also drizzle chicken with some olive oil, gently.Place the chicken in a baking dish and bake for 30 minutes.

Once baked, remove from the oven and serve these easy spinach stuffed chicken breasts warm.

Recipe variations 

You can make this recipe in a different way. Instead of combining spinach and cream cheese, you can stuff the chicken with spinach with no cream cheese. Cook the spinach in simmering water until wilted. Drain the spinach and season to taste with salt, pepper, and garlic powder. Stuff the chicken and bake according to recipe. 

You can also make this recipe with mozzarella. To make, you will need cooked spinach and 4 slices of mozzarella cheese. Make a pocket in the chicken breasts, and stuff with mozzarella and spinach. Bake for 30 minutes.

You can also make this stuffed chicken breast recipe with broccoli. In a bowl, combine 1 cup of chopped broccoli with cream cheese, parmesan, and mayonnaise. Season to taste with salt and pepper. I would add garlic powder and onion, but skip the paprika. Once you make a pocket in your chicken breast, stuff it with the broccoli mix. Bake the chicken for 30 minutes. 

What to serve with

Serve chicken with some fresh salad, steamed broccoli, or cauliflower mash. 

How to store

You can store the chicken in a fridge, an airtight container up to 3 days. If freezing, place the chicken in a zip-lock bag and freeze up to 3 months. I would not go further, because the cheese structure could change. To serve, thaw overnight and reheat in the oven.
